  1. Preheat the oven to 400 degrees. Toss the cubed butternut squash with one tablespoon of olive oil, salt, and pepper on a baking sheet. Roast for 20 minutes until the edges begin to brown.
  2. While the squash roasts, cook the penne in a large pot of salted water until al dente. Drain and set aside.
  3. Heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and cook until softened. Stir in the garlic and sage and cook for one minute more.
  4. In a large bowl, combine the cooked pasta, roasted squash, onion mixture, ricotta, one cup of mozzarella, and the Parmesan. Season with salt and pepper and mix until evenly coated.

Roast the squash a day ahead and store it in the fridge so assembly goes faster on busy nights.
