- 2 cups marinara sauce
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil and cook the cannelloni tubes for 3 minutes less than the package directs. Drain and set aside on a lightly oiled tray to prevent sticking.
- Heat the olive oil in a skillet over medium heat. Add the onion and garlic and cook for 2 minutes until softened. Stir in the mixed vegetables and cook for 4 to 5 minutes until tender. Season with salt, pepper, and Italian herbs, then remove from heat and let cool slightly.
- In a mixing bowl, combine the ricotta, half the mozzarella, and half the Parmesan. Fold in the cooked vegetable mixture until evenly mixed.
- Spoon the filling into each cannelloni tube using a small spoon or piping bag. Spread 1 cup of marinara sauce across the bottom of a 9×13 baking dish.
- Arrange the filled tubes in a single layer over the sauce. Pour the remaining marinara over the top and sprinkle with the remaining mozzarella and Parmesan.
- Cover the dish tightly with foil and bake at 375°F for 25 minutes. Remove the foil and bake 10 minutes more until the cheese is melted and lightly browned.
Extra Tips
Assemble the dish completely before freezing so you can bake straight from frozen; just add 15 extra minutes under the foil. If the filling seems dry after reheating, drizzle a little extra marinara around the edges before warming. Leftovers reheat best in a covered skillet with a splash of water to keep the pasta soft.
